Conventional pico de gallo doesn’t have any fluid apart from lime juice in it, yet when tomatoes are out of season and not the most flavorful, including some olive oil and balsamic vinegar aid to brighten the flavour.
Components:
* 1 white onion
* 1 jalapeno
* 2 tomato
* 1/2 cup cilantro
* 2 cloves garlic
* 1 lime (juiced).
* 1-2 tbsp jalapeño white balsamic vinegar.
* 1-2 tablespoon persian lime + olive wood smoked olive oil.
* 1 tsp sriracha lime sea salt.
* 1 tsp black pepper + coriander.
