When a warm steel blade comes under water, you’ll hear the sound of vapor as the water evaporates. This phenomenon is called quenching. Relieving is a process used to increase the hardness of steel by heating it and then rapidly cooling it. A blade that hasn’t been quenched is more likely to dull or bend, while a satiated blade remains sharp and can quickly puncture tough products.
