Salted Chocolate Cookie Dough:
1.5 cups all-purpose flour
1/2 cup cocoa powder
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp fine sea salt
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup light brown sugar
2 tsp vanilla extract
1 Tbsp whole milk
3 ounces cream cheese
3 Tbsp salted butter, softened
2.5 cups powdered sugar
1 vanilla bean scraped of its pods
1/2 tsp vanilla extract
2 tsp milk
Preheat oven to 350f line baking sheet with silicone baking mat or parchment paper
Large bowl whisk the flour, cocoa powder, baking soda, baking powder, salt
Cream butter with the sugar, add the eggs, vanilla extract, milk
Add dry ingredients into the wet and mix till thick and combined
scoop 1 tablespoon cookie dough into a ball, place on baking sheets 2 inches apart
Using the bottom of a greased measuring cup or a cookie press, press dough balls halfway down
Bake at 350 for 8-11 minutes, rest to solidify, then transfer to cool the rest of the way on a wire rack
In a large bowl add butter and cream cheese. Using a hand mixer, beat until combined. Next, add half of your powdered sugar and mix until smooth then add in the rest.
Now add milk and vanilla. Then transfer to a piping bag.
Pipe 1.5 Tbsp of your cream onto one of your cookies then top with another cookie.
