Veggie Wraps:
Ingredients:
• 4 rice paper sheets
• 2 sheets nori
• ½ cucumber cut into match sticks
• ½ red or orange pepper, cut into match sticks
• 1 avocado, cut into match sticks
• fresh dill or other herbs
• 1 bunch fresh sprouts
• 1 cup shredded carrots
• ½ cup shredded beets
• 4 pieces romaine lettuce
Directions: Prepare vegetables and spicy tahini almond dressing. Wet rice paper sheets in luke warm water. Lay out 2 rice papers (to look like an 8), place 1 nori sheet on top of rice paper. Put a few teaspoons of sauce on paper and stack vegetables on top. Roll into a wrap and eat.
Spicy Tahini Almond: Dressing: Yields 1 cup
• 4 TBSP Raw Almond Butter
• 2 TBSP Raw Tahini
• 1/3 Cup water (to thin)
• Juice of ½ a lemon
• 2 TBSP maple syrup
• 2 TBSP Nama Shoyu Soy Sauce or other soy sauce of choice
• 2 tsp toasted Sesame oil
• 1 clove garlic
• 1 thumb ginger
• ¼ tsp cayenne pepper
Directions : Blend all ingredients. Use as sauce on thai wraps inside or for dipping
